Cheese muffins and a thank you note

My baking mojo is still here hence I made some cheese muffins this time ;)

Ingredients:
100g butter
200g cream cheese
200g flour (sieved)
80g caster sugar
120ml milk
2 eggs
2 teaspoon baking powder
1 tablespoon lemon juice

Steps:
1. Beat cream cheese til soft, then add in butter.
2. Add in caster sugar, continue to blend them til fluffy.
3. Add in egg one at a time.
4. Stir in milk and lemon juice.
5. Lastly, add in flour and baking powder, blend them in one direction. The batter should look something like this..... 


6. Scoop the batter into the muffin cups, and bake for bout 30 minutes under 180'C.



And the final results.............

I sprinkled some chocolate chips on top too! Another simple yet perfect tea time snacks! ^^

  6. The cheese muffins are tasty. I baked something similar earlier, and I felt I was in culinary heaven. Quite difficult to bake without an electric mixer, don't you think? =)

    1. Definitely! It requires more time, and hands become tired easily. But, the cakes taste much better with hand mixing, cause it's filled with our effort! ;)

  8. I've never heard of cheese muffins before. Cheesecake, yes but not this. I'm sure they taste great. Wah, I like your bento box too cos I love Japanese snacks ;)

  25. I didn't bake my own cheesecake so far, because Yvonne loves and good in baking cheesecake. So, I don't need to bake it myself. Instead, I bake more butter cup cakes.
