Pancake muffins (and giveaway results)

Hi! Hope you're having a great day! ;)

Today I wanna share an easy recipe on baked pancake muffins.

Here's the ingredients needed:
- 300g pancake mix (I couldn't find pancake mix, I used waffle mix instead)
- 200ml milk
- 2 eggs
- 75g maple syrup
- optional mix ins (Let your creativity runs free!)

Steps:
1. Preheat oven to 350°. Mix together pancake mix, milk, eggs and maple syrup.
2. Pour mixture into muffin cups/muffin tray, about 2/3 full, if you are using mix ins, do so now.
3. Bake for 15 minutes, or until a toothpick inserted, comes out clean.

I just use whatever mix ins I could find at home....

The texture is soft and almost melts in the mouth, it smells great and slightly sweet too (probably because of the maple syrup), this waffle mix is so convenient! I am going to use it again next time ;)

However, the M&M's I put got sank to the bottom of the muffin so they were not seen in the photos, haha!

What's my favorite? Got to be the blueberry ones!


On a side note, I organized a mask giveaway last week and though the response wasn't so good (probably because the prize is cheap so not many people are interested), I picked a lucky winner anyway.

    I am not an expert baker like you all Taiping sistas but I used to bake huge muffins every week while a student and shared with my Korean & Japanese room mates for breakfast on Mondays! My secret is to freeze the M&M or Chocolate Chips inside freezer until the muffins are halfway baked in the oven. Quickly bring out the frozen sweeties and sprinkle on top! When your muffins are baked and ready, even the chocolate chips will look like its original shape when cool without melting!

    Will I get a mask for sharing my secret?? Just kidding only.

  6. Good idea wor, use waffle/pancake mix to be baked into muffins...So the texture is like cake or pancake or cupcake? Hehe.. Hmm ok if nex time if mau senang, I will just maje these, pop a few M&M's and I think kids will love it..

  15. Congrats Nicole! No, I don't think less people join because the gift is inexpensive. I think they did not know about it. I left a comment at that post but I did not meet the requirements because I have never used a mask before so cannot give a brand name.

      The texture is a bit of both waffle and normal cake.

    1. haha, i like this!! just improvise!! see whatever you have at home and use them as the ingredients!! that is way more fun than having to get the specific ingredients lah.. now, see you have so many types of muffins at one go leh.. got blueberry, cheese, choc chips, almond crush and (sunken) M&M's.. no wonder you didn't show the M&M's lah, hehehehe~~ but then sink into the bottom means 好物沉歸底 mah :p

  24. delicious cakes..plentiful of mask in Korea. Very interesting as there are all kinds. In fact I bought a few types too. I had tried the ginseng mask in the beauty academy and it was good. Bought a few boxes for my family usage.
